How I'm doing so far!

I know it has been a while since my last post but I’ve been busy! Some of my life updates since the last post include a girls weekend in Chicago (see business card receive on a night out below), a good friend from the girls weekend and I simultaneously contracting strep throat, the UM vs. UMASS football game (go blue), starting a new relationship :) , and oh yeah that little thing I do to make money (work).

Through all this, it has not been easy to start my whole foods, plant based diet but I think I’ve made a pretty good start. Currently I’d say I’m eating this diet approximately 75% of the time.  I’ve had lots and lots of cravings and I haven’t always been able to resist. Some of my cheat foods have included Dairy Queen blizzards, Arby’s, and some cheesy Mexican.  Not the best choices I know but I’m just getting started and I was used to eating whatever I felt like before.  I was able to resist an Arby’s crazing one day and made salmon and green beans instead (still cheating but healthier at least!).  On a better note see some photos of what I have been eating that is on point for my new diet below! The star ingredient for me right now is quinoa, very yummy and healthy!

Cheat Meal: Salmon and green beans

Quinoa w/ broccoli, tomato, black beans, and corn

Quinoa w/ carrots, spinach, mushrooms, onions, and peppers

My next goal is to eliminate giving into my fast food cravings so that if I do for some reason slip up I am at least making the food myself so it is healthier.  I’ll keep you updated on the results! Another post on what I am eating to come soon!

Hello All!

I am starting to write this blog for a record of my transition from the typical American diet to a whole foods, plants based (WFPB) diet, aka vegan. I am doing this on a quest to better health and mood. My quest began a month ago when I was seen in the ER for heart palpitations and dizziness. The doctors have not yet been able to find anything wrong with me even though I am still having occasional dizziness and nausea. In terms of health I have been working out on a semi-regular basis for a year and a half now so I don't attribute my issues to lack of exercise. That being said I am also improving my workout routine with soccer once or twice weekly so I am up to exercising about 5-6 days a week.

I found the WFPB diet through a friend of mine, you can check out her blog at www.healthyfitgoddess.com. She even has a recent post on starting a vegan lifestyle. If you are interested you should definitely check out the movie forks over knives, which can be streamed on amazon instantly if you have a prime account. This movie really opened my eyes to the true extent of what Americans are doing to themselves with food. I know I personally want to live a long and healthy life so I am taking action now.

I plan to post progress with the change, recipes, gripes about the change, and anything else that happens to me along the way! Stay tuned for my first "real" post coming soon!

***Disclaimer- I am just learning about this diet and lifestyle so I am sure I will make mistakes along the way. I am in no way offering advice to anyone about health, diet, or exercise just simply sharing my experiences.
